Appetizer Ideas...

As luck would have it, I have come down with a nasty cold....or Ive suddenlyt developed uber crazy allergies. Whatever this is, it won today and I called in sick. ZERO energy.

But I am trying to stay productive, so I am looking up appetizer ideas for the party next month. I need to have food for 20...and the night of the party I am thinking of doing appetizers, fruits, veggies..

Does anyone have any fool-proof ideas that you'd like to share? Im thinking chicken wings, bacon wrapped lil smokies, 7 layer dip....of course my moms beefy bread dip....

I thought maybe some of you would have party favorites youd like to share. Would love a couple of make-earlier in the day things...or???

Party drink favorites? Im getting margarita makings...but what other quick party favs would you suggest?

There are 18-20 of us staying in an 8 bedroom home for three days (My treat to them for my 50th birthday). Each couple has their own king suite with a bathroom. I have asked each couple to take a meal- they are responsible for bringing the food, preparing and clean up for thier meal. I am taking the party night food etc. I am looking for fun things to make so that those who want to create in the kitchen can hop in and 'play'. Those who dont will have a hot tub, pool table, foosball, ping pong, shuffleboard, movies, dancing, miles of walking trails, bikes, sightseeing and golf. (The house is on the golf course.)

Im really getting excited for the party...we are officially under a month away!

And at the opposite end of the emotional spectrum...an update on my friend's son. The doctors are trying to find another medication to put him on and they may have found a possibility. The cancer is closing his trachea and he is getting a really bad cough from it. The medication that they are considering is back east? and they working to get it here asap. His mom is coming to terms with the possibility he may not be able to fight much longer. It is heartbreaking. I wish there was more I could do. He is just 21. Frown

    That must be so difficult to deal with - not only him being young, but sounds like a lot of suffering. Frown

    I found this when trying to google the recipe. We usually use rasberry preserves. At family camp they actually had a wine and cheese night, and made this. We asked for the "recipe" - it was so divine. Dh brought this for Easter and everyone raved. We serve it every time we have a crowd, since it is too much for just a couple of people! Can serve with crackers or sliced bread. It's my kind of appetizer - amazingly simple but divine!

    P.S. I give up on telling the difference between a cold and allergies. Interestingly the allergies seem to be hitting my co-workers HARD this year and have been light on me. My eyes are itching like crazy - but that's about it. My co-workers all sound and look TERRIBLE - several have told me not to worry - it's just allergies. It's kind of bizarro because usually I am the only one walking around like that. I figure the allergens are different than usual this year.

    I love doing appetizers and try to do something different each time, but there are a few I keep coming back to!
    -Pigs in blankets (we use tofu dogs) always disappear quickly from the food table.
    -Onion dip is the quick classic, and spinach dip in a bread bowl (or just with dark bread nearby to eat with it) always popular. Another nice one is BLT dip--mix sour cream, mayo, Bacos, chopped tomatoes & chopped green onions.
    -The standard meatballs in a combo of cranberry sauce & chili sauce (we use veggie meatballs) is classic for a reason. Delightful!
    -More time-intensive but popular is stuffed jalapenos--once I breaded them in a spicy shake-n-bake and people were crazy about that, but it took a lot more effort than most of my standard apps.
    -Mini-sandwiches: cucumber & dill, peanut-butter & banana, etc.
    -Rollups! Bologna spread w/cream cheese, wrapped around a pickle and cut into bite-size pieces is a campy old-timey treat. Or spread cream cheese on spinach tortillas and lay a few slices of roasted red pepper, then cut up.
    -This one appears at almost every party we throw: tamari roasted pumpkin seeds. Get some hulled pumpkin seeds (sometimes called pepitos) and dry toast them in a skillet, tossing frequently, until a bunch of them have "popped" and are starting to brown. Remove skillet from heat and throw in a few tablespoons of tamari, soy sauce or Braggs and, if you want, about a teaspoon of liquid smoke. Stir it around and leave it in the skillet--the sauce will dry and stick to the seeds.
    -OK one more--Brie cups. Get those miniature phyllo cups from the freezer section, put a little hunk of Brie cheese and a dollop of apricot or raspberry preserves, bake about 15 min at 350.

    Ooooh - I like the idea to take it one step further with the brie (phylo dough). Still sounds pretty dang simple!
