The potluck that was scheduled at work tomorrow, was moved to Tuesday. (about 15 people) (Monday is a training day and the whole company goes offsite for Columbus day)...
It is also my month to prepare a meal on Tuesday for our homeless teen shelter. (about 15 people)
So I need to prepare a full meal for the shelter and I volunteered a main dish for the potluck lunch at work..
I figure I can either cook the meals on Sunday ..or Monday night.
I need a couple of crowd pleasing dishes that are easy and relatively inexpensive. My first go round with websites included chili, soup...
Maybe an enchilada type dish...hmmm. Any ideas?

1 can regular corn, 1 can cream corn, 1 sm pkg cornmeal, 16 oz pkg shredded cheese, 1 tbsp sour cream, and 1 thingy of green onions diced(makes about 8 - 10 good sized servings)*Can add an egg or two for extra puffiness, but not required.
You just mix all the ingredients together and bake at 375 for about 45 minutes. Yum! (I always get compliments on this dish.)

roughly 2 cups Special K cereal (plain!!), 16 oz cottage cheese, 2 tbsp McKay's Chicken seasoning (or other chicken seasoning ...), one egg, 1/2 cup chopped walnuts. 1 cup diced onions.
Mix all together (add more special k if too runny). Bake at 350 for about 40 minutes covered, and then about 20 minutes more uncovered. Makes about 12 servings.
Another big hit.
