Easy dinner and planning a mental health day!

Tonight's dinner was PB&J on toast. Sometimes simple is good and tonight was simple. Cheap, easy and quick-the perfect choice when you are home alone!

I decided to take a 'mental health' day next Monday, making the coming weekend a three day one for me. I have been working, watching grandbabies, volunteering, etc..and I am pooped. A 'me' day sounds wonderful. Do you ever just take a me day?
I am not sure how I will spend Monday, but will certainly appreciate only working four days next week, followed by a week of vacation and a four day week the week after.

We have our family trip coming up in a couple of weeks, and I am planning some surprises during the trip. I want to get little prizes for the Halloween party night and for a shuffle board contest. Nothing expensive, just fun small gifts to add to the festivities. So I will do some shopping one day this weekend. I love doing special unexpected treats!

I volunteer on a board for a non-profit- we are planning to have a 3 day conference next April. I get the opportunity to build the budget for the event. I am going to plan on 75 attendees, but set a stretch goal for 100. I know we can hit the goal, but others on the board aren't as optimistic. I have confidence in this team..so I am sticking to the goal.

My little house is COLD tonight. (well, not cold enough to see my breath) But I am starting to second guess my decision not to get a big propane tank. However, we have a nice electric fireplace-type heater in storage that Im gonna have the hub set up when he is home. There isn't much space for it, but I think I can make it work..and it has a mantle, which will be a great space to decorate for the Holidays. And there are always sweaters and blankets to help stave off the chill.

    I love PB&J toast for a snack, breakfast, lunch, dinner -- I'm almost always in the mood for one! Usually I go for the classic, grape jelly and all, but sometimes I change it up a bit and put bananas instead of jelly, or tonight for a snack I did PB & corn-cob jelly topped with spicy dill pickle and pickled jalapeno. (My family thinks I'm nuts with some of my peanut butter experiments. Wink
    A "me" day sounds heavenly. Unfortunately I've promised my work I won't take any more days off (except the week of Xmas, when the kids will be home with me) and will carry over the rest of my vacation time to next year. (We're trying to supercharge our productivity to make up for missing our budget goals.) Maybe in January I can indulge!

    I am trying to Not use the heater until after November 15. I am allowing myself the use of an electric lap blanket. But no heat until November 15 at the earliest. I'd like to see how long I can possibly go maybe till after Thanksgiving? With my work hours and the electric lap blanket I'm usually pretty okay and toasty. Hope you get warmed up soon!

    I do like a PB&J as well. Raspberry jam and peanut butter are staples in our home. Stay warm and enjoy your me day. I don't get one specifically, but since I stay at home when the kids are at school, I do get my 'me' time in.

    What are you doing to get attendees? Our board just put on a conference, which went great, but attendance was lower than we would like.

    CB- we are using word of mouth, various social media avenues, mail and email invite/registrations, personal visits by key individuals, and setting up a great line up of topics/speakers. Our organization is known throughout the state...so hopefully that will help.

    Terrific idea to take a 'me' day. I can't fathom how you handle so many tasks/roles without getting overwhelmed. I wonder if you've reviewed thosewheeled oil filled heaters sold at Home Depot/Lowes type outlets that look like old fashioned radiators. They are inexpensive, portable and easy to operate

    I love PB&J too - but it's even better grilled! That was one of my favorite meals my mom would make on Saturday nights - grilled PB&J and grilled cheese. YUM!

    I hope your "me" day gives you the rest you need for the upcoming activities. Smile
