What are your GO TO meals?

November 8th, 2013 at 03:03 am

Planning is one of the best ways to stick to a food budget, but a second favorite of mine, is to have a few 'go to' meals that have easily stored ingredients that can be fixed in a pinch. You forget to take something out to thaw, you realize you don't have the right ingredients, something cut into your meal preparation time...no problem when you have go to options.

My favorite go to meal: tortillas, refried beans, cheese and salsa (preferably salsa verde). All of these keep well, and a fairly healthy meal can be tossed together in under 5 minutes. Health it up a little by adding chopped lettuce or tomato.

Other go tos in our house- oatmeal, pb&j, or grilled cheese.

What are some of the go tos for your family? I am always looking for new ideas!

Pasta and sauce is probably our go to meal.

Baked potato "bar"-wash and throw potatoes in the oven as soon as you hit the door-the topping bar fixings depend on what's on hand" : we always have cheese, butter, leftover steamed veggies-then maybe leftover chicken, bacon, red or green onions, sauteed mushrooms- whatever you have on hand will "work"..

Pancakes, scrambled egg sandwiches and tacos. Also, pizza. I will keep a prepared crust on hand to make a fast and easy pizza. Even if I don't have a meat topping available I keep onions and frozen bell pepper strips on hand and those easily go on a cheese pizza. Angel hair pasta with tomato sauce. Also, now that I have canned meat I can just open a jar and warm it up, same with a veggie side, either stove top in a pan or in the microwave.

Omelettes! We always have veggies, lunchmeat, cheese, and eggs in the fridge, and what's yummier than a big fluffy omelette?

Refried bean burritos, breakfast for dinner (pancakes, fruit and some kind of fake meat), spaghetti w/red sauce or with spicy garlic toss (garlic olive oil & herbs/spices), BLATs (bac'n lettuce avocado tomato sandwiches), veggie burgers & fries, hoppin' Jean & whatever veggie is on hand, southern-fried tofu with biscuits & broccoli (or SF tofu with waffles), homemade mac n cheese, taco salad, carmelized tofu with some sort of veggie and rice. Go-to side dishes include lemon-butter broccoli, honey-mustard carrots, stewed apples, biscuits, mashed potatoes, sauteed greens, sesame cucumber salad, coleslaw, baked beans from a can, tater tots or fries.

Yep, pretty much what everybody else said. I try to have frozen meatballs as well as frozen ravioli and some dried tortellini.

I always have on hand: bread and cheese (grilled cheese sandwiches! - which of course you already mentioned) and usually have tomato soup to go with it.

I always have dried polenta in the pantry and parmesan in the fridge and little things of frozen leftover red sauce in the freezer (polenta with parmesan and red sauce!).

My favorite pasta dish is something we call bad breath pasta (I always have all of these staples on hand): penne, balsamic, olive oil, garlic, greek olives, capers, something green that will wilt like spinach or arugula.
